Dutch baby pancake

INGREDIENTS for 1 pancake that serves 2 people

  • Butter, melted - 3 Tbsp

  • Eggs, whipped - 5

  • Milk, skim - 1 cup

  • All-purpose flour - 3/4 cup

  • Sugar - 1 Tbsp

DIRECTIONS (ingredients must be added quickly after whipping eggs)

  1. Pre-measure out 1 cup of milk, 3/4 cups of flour and 1 Tbsp and set aside

  2. Pre-heat oven to 400

  3. While oven is pre-heating, setup food processor with plastic blade and crack 5 eggs into it

  4. Put 3 Tbsp of butter in glass baking dish (9" pie or similar size) and put it oven to pre-heat and melt the butter

  5. Once butter is half-way melted, start food processor to whip the eggs. You have to let them get really whipped so leave it going for a least a minute. (This recipe requires a food processor, so don't go thinking you can adequately whip the eggs by hand.)

  6. Quickly add the milk, flour and sugar and run the food processor for another 15 seconds or so to mix it all together.

  7. Quickly add the pancake mix to the pan with the now fully melted butter and return to the oven.

  8. Bake for 20 min. About 10-15 minutes in you should see it starting to puff up along the sides. That means it's working!

  9. Garnish with more butter and powdered sugar or blueberry compote.

  10. And then...NOM NOM CHOMP!
