Kale & Quinoa Salad

INGREDIENTS for 6-8 servings

  • Kale, curly - 1 bunch, julienned

  • Tomatoes, Roma - 4, diced 1/2"

  • English cucumber - 4, seeds removed and diced 1/2"

  • Onion, medium - 1, diced 1/2"

  • Cilantro, coarsely chopped - 1 cup

  • (Optional) Celery - 1 stalk, diced 1/4" or smaller

  • Quinoa, raw - 3 cups, cook in 44 oz of water and fluff while cooling

Dressing

  • Olive oil - 2/3 cup

  • Lemon juice - 3/4 cup

  • White vinegar - 1/3 cup

  • Salt - 1 Tbsp

  • Black pepper - 2 tsp
