Flavor bomb Scalloped Potaoes

INGREDIENTS

Produce department

  • Yukon gold potatoes - 8-9 or 3 lbs, sliced 1/8" or 4mm

  • Red onions - 1/2 medium or 1/4 large, thinly sliced

  • (Optional) Broccoli - 1/2 cup, chopped

Dairy aisle

  • Butter - 1/2 Tbsp

  • Heavy cream or half-and-half or milk - 2 cups (or 473 ml)

  • Sharp cheddar, shredded - 3/4 cup

  • Pepper Jack cheese, shredded - 3/4 cup

  • Colby Jack cheese, shredded - 3/4 cup

  • Parmesan, sliced - 1/2 cup

Canned goods & Soups

  • Chicken bouillon - 1/2 Tbsp

Spice rack & Baking aisle

  • Olive oil - 1 Tbsp

  • All purpose flour - 1/4 cup

  • Salt - 1 tsp

  • Black pepper - 1/2 tsp

  • Garlic powder - 1 tsp

  • Rosemary - 1-1/2 tsp

  • (Optional) Red pepper flakes - 1/2 tsp

  • Paprika - 1 tsp

  • Thyme - 1 tsp

  • Bread crumbs - 1 cup


DIRECTIONS

Sauce

  1. In a sauté pan, preheat butter (1/2 Tbsp) and olive oil (1 Tbsp) with high heat and sauté sliced red onion until caramelized.

  2. In the same pan, stir in salt (1 tsp), black pepper (1/2 tsp), garlic powder (1 tsp), rosemary (1-1/2 tsp) and (optional) red pepper flakes (1/2 tsp). Sauté until the seasoning and onions are fragrant.

  3. Reduce heat to low, stir in flour (1/4 cup) and mix well.

  4. In a separate bowl, dissolve chicken bouillon (1/2 Tbsp) with warm water (1 cup). Add the mixture to the flour and mix well. The resulting sauce should have a very thick consistency.

  5. Change heat to medium-high, slowly stir in the heavy cream (2 cups) and whisk until the mixture is smooth. Allow the sauce to reach a light boil and remove from heat.

  6. Stir in (optional) chopped broccoli (1/2 cup). Set aside for assembly.


Assembly

  1. Preheat the oven to 350F.

  2. In a 9"x13" pan, brush on some olive oil

  3. Line the pan with 1/3 of the potatoes and sprinkle the potato layer with salt and black pepper. Pour 1 cup of sauce on top. Spread the sauce over the potatoes evenly. The sauce can only thinly over the potatoes but that's ok!

  4. Cover the layer with one of the shredded cheese (3/4 cup).

  5. Repeat to complete assembling all 3 layers.

  6. Cover and bake for 2 hours.

  7. Remove the pan from the oven. Preheat oven to 400F.

  8. In a bowl, mix bread crumbs (1 cup), paprika (1 tsp), and thyme (1 tsp). Sprinkle the bread crumbs mix and parmesan (1/2 cup) on top. Bake for another 10-15 minutes until the top is golden brown.
