Spiced roasted cauliflower

The Middle Eastern-inspired all-purpose SPICE BLEND.

INGREDIENTS

  • Salt - 2 tsp

  • Black pepper - 2 tsp

  • Sugar - 2 tsp

  • Coriander, ground - 2 tsp

  • Chili powder - 1 tsp

  • Cumin powder - 4 tbsp

  • Garlic powder - 2 tbsp

  • Paprika - 2 tsp

  • Tumeric - 2 tsp


DIRECTIONS

  1. Mix all the ingredients together and store in a spice jar.


NOTES

This all-purpose blend can be used when BBQ/roasting/frying different vegetables (cauliflower, potatoes, etc) and meats (beef short ribs, steak, lamb chops, chicken quarters/drumsticks/wings, etc.

INGREDIENTS

  • Cauliflower, white - 1 head, cut into bite-sized florets (yields ~8 cups)

  • Olive oil - 1/4 cup

  • Beartso's "Middle Eastern-inspired all-purpose" spice blend - 2 Tbsp (or more to taste)


DIRECTIONS

  1. Preheat oven to 450F.

  2. In a mixing bowl, combine cauliflower (8 cups) with olive oil (1/4 cup) and Beartso's "Middle Eastern-inspired all-purpose" spice blend (2 Tbsp). Mix until all the florets are coated with the spice.

  3. Place the marinated cauliflower in a baking pan, spread the florets evenly. Roast for 20 mins or until the florets are soft.

  4. Change the oven to broil to give the cauliflower a light char. Serve.
