Pad See Ew

Thai stir fried noodles with soy sauce.

INGREDIENTS for 2 large servings

Meat or Seafood department

Choose 1 of

  • Beef, sliced or fajita strips - 1 lb

  • Chicken thighs, skinless boneless - 1lbs, diced 1"

  • Shrimps, large raw - 12-16, deveined, peeled, tails removed

Produce department

  • Chinese broccoli/gai lan - 4-6, crosscut 2",
    Substitute: Broccolini - 4-6, crosscut 2"

  • Garlic, minced - 1-1/2 tbsp (or 5-6 cloves, crushed)

  • (Optional) Lime juice

Dairy aisle

  • Eggs - 2

Condiments aisle

  • Olive oil - 1/2 + 1/2 + 2 + 1/2 tbsp

  • White vinegar - 1 tsp

Baking aisle

  • Brown sugar - 1 tsp

International aisle

Specialty items

  • Thai soy sauce - 1 tbsp
    Substitute: soy sauce 1 tbsp, brown sugar 1/4 tsp


DIRECTIONS

  1. Marinade the meat of choice a few hours in advance.

Marinade:

    • Oyster sauce - 1 tbsp

    • Olive oil - 1/2 tbsp

  1. To make the Pad See Ew sauce, combine all the sauce ingredients in a bowl and mix well.

Sauce:

    • Thai soy sauce - 1 tbsp
      Substitute: soy sauce 1 tbsp, brown sugar 1/4 tsp

    • Soy sauce - 1 tbsp

    • Oyster sauce - 2 tbsp

    • Fish sauce - 1/2 tbsp

    • White vinegar - 1 tsp

    • Brown sugar - 1 tsp

  1. Ignore the noodle cooking instruction on the package. Fill a deep dish or baking pan with hot water and soak the noodles until it's softened enough to flex without breaking.

  2. In a skillet or sauté pan, heat olive oil (1/2 tbsp) over high heat. Add the protein (beef, chicken or shrimp) and sauté until beef is medium, chicken or shrimp fully cooked. Strain out the liquid and discard. Set the meat aside.

  3. In the same pan, heat olive oil (2 tbsp) over high heat. Add garlic (minced 1-1/2 tbsp or chopped 5-6 cloves). Stir frequently to avoid burning. Cook until fragrant.

  4. Add the Chinese broccoli or broccolini and give it a quick stir. Add the softened noodles and continue to stir while the pan heats back up.

  5. Add the Pad See Ew sauce and mix with the ingredients. If sauce is fully absorbed before the noodle is soft enough, stir in 1 tbsp water at a time until the noodles is cooked to the desired texture. Taste testing may be required.

  6. Push the ingredients in the pan to the side to make room for cooking the eggs. Add olive oil (1/2 tbsp) to the empty spot in the pan and crack the eggs (2) over the oil.

  7. Break the yolks and spread it a little with the spatula. Allow the eggs to firm and crisp up slightly on the edge (15-30 secs) before stirring again to cook the eggs fully.

  8. Add the meat back to the pan and give it a quick stir to finish. Sprinkle a little lime juice if desired when serving.
