Yellow Rice

Arroz Amarillo

INGREDIENTS for 4 servings

Produce department

  • Rice, jasmine (or other long grain) - 2 cups

  • Bell pepper, 1/4-1/2" diced - 1/4 cup

Condiments aisle

  • Olive oil or avocado - 2 Tbsp

  • Chicken bouillon - 1/2 Tbsp

Spice rack

  • Salt - 1 tsp

  • Chili powder - 1/4 tsp

  • Garlic powder - 2 tsp

  • Paprika - 1/4 tsp

  • Red pepper flakes - 1/4 tsp

  • Turmeric - 1 tsp


DIRECTIONS

  1. In a skillet, heat the olive oil or avocado oil (2 Tbsp) on high heat. Sauté diced bell pepper (1/4 cup) until edges are slightly charred.

  2. Dissolve chicken bouillon (1/2 Tbsp) in 1/4 cup of hot water. Mix in all the seasonings to make a paste:

    • Salt - 1 tsp

    • Chili powder - 1/4 tsp

    • Garlic powder - 2 tsp

    • Paprika - 1/4 tsp

    • Red pepper flakes - 1/4 tsp

    • Turmeric - 1 tsp

  3. Mix the seasoning paste with the rice (2 cups) in the rice cooker. Add 2 cups of water. Stir in the sautéed bell pepper with all the oil. Start the rice cooker using normal setting.
