Carne Asada

Mexican-style grilled skirt steak

INGREDIENTS

  • Skirt steak - 1-1/2 to 2 lbs

Marinade

  • Garlic, minced - 2 tbsp (or 8 cloves, crushed)

  • Cilantro, finely chopped - 1/2 cup

  • (Optional) Jalapeno - 1, seeded and diced

  • Lime juice - 1/4 cup

  • Orange juice - 1/4 cup
    Substitute: White vinegar 1 tbsp + mirin 1 tbsp

  • Salt - 1/2 tsp

  • Black pepper - 1/2 tsp

  • Chili powder (or cayenne pepper) - 1/4 tsp

  • Cumin, ground - 1 tsp

  • Oregano, dried - 1 tsp

  • Soy sauce - 1/4 cup

  • Olive oil - 1/4 cup



DIRECTIONS

For best results, marinade the skirt steak 1 day in advance.
