Pollo asado

Mexican style grilled chicken.

INGREDIENTS for 2 servings

Meat department

  • Chicken thighs - 4-6 pieces/1-1.5 lbs
    Skinless, boneless for easy eating, or bone-in for more flavor.

Produce department

  • Garlic, minced - 2 tbsp

  • Lime juice - 1/4 cup

Juice aisle

  • Orange juice - 1/4 cup
    Substitute: White vinegar 2 tbsp + mirin 2 tbsp

Condiments aisle

  • White vinegar - 1 tbsp

  • Olive oil - 1/4 cup

Spice rack

  • Salt - 1 tsp

  • Black pepper, ground - 1 tsp

  • Cumin, ground, 2 tsp

  • Oregano - 3 tsp

  • Paprika - 1-1/2 tbsp


DIRECTIONS

For best results, marinade the chicken for at least 2 hrs but no more than a day.

  1. Combine the marinade ingredients together. Mix well and store in a sealed container.

    • Garlic, minced - 2 tbsp

    • Lime juice - 1/4 cup

    • Orange juice - 1/4 cup
      Substitute: White vinegar 2 tbsp + mirin 2 tbsp

    • White vinegar - 1 tbsp

    • Salt - 1 tsp

    • Black pepper, ground - 1 tsp

    • Cumin, ground, 2 tsp

    • Oregano - 3 tsp

    • Paprika - 1-1/2 tbsp

    • Olive oil - 1/4 cup

  2. Use 2-3 tbsp to marinade the chicken. Save the remainder to baste the chicken while grilling.
