Beartso's Homemade
Pollo asado
Mexican style grilled chicken.
INGREDIENTS for 2 servings
Meat department
Chicken thighs - 4-6 pieces/1-1.5 lbs
Skinless, boneless for easy eating, or bone-in for more flavor.
Produce department
Garlic, minced - 2 tbsp
Lime juice - 1/4 cup
Juice aisle
Orange juice - 1/4 cup
Substitute: White vinegar 2 tbsp + mirin 2 tbsp
Condiments aisle
White vinegar - 1 tbsp
Olive oil - 1/4 cup
Spice rack
Salt - 1 tsp
Black pepper, ground - 1 tsp
Cumin, ground, 2 tsp
Oregano - 3 tsp
Paprika - 1-1/2 tbsp
DIRECTIONS
For best results, marinade the chicken for at least 2 hrs but no more than a day.
Combine the marinade ingredients together. Mix well and store in a sealed container.

Use 2-3 tbsp to marinade the chicken. Save the remainder to baste the chicken while grilling.
